Amy's Mushroom Risotto
Amy's Mushroom Risotto was a great find. I tried making risotto, but it would never come out the like the risotto at my favorite Italian restaurant. When the restaurant closed, my risotto dreams were crushed until I found this risotto. Amy's uses all organic ingredients and is dedicated to high quality meals. The arborio rice is tender and creamy with a generous amount of porcini mushrooms. There are also green peas, but please do not look away or close this tab. I seem to know a lot of people who do not like green peas so if you don't like green peas, I will tell you what I tell the others...it does not matter with this dish! All you taste is the rich flavor of the porcini mushrooms, so don't be afraid of those peas!
The box indicates that the 9.5 oz bowl is one serving, but I have used it as a side to an Italian seasoned rotisserie chicken from the deli and fresh asparagus. It cost $3.76 which might be a bit higher than other one meal dishes, but you have to consider that the ingredients are organic without preservatives, no added MSG, no genetically engineered ingredients (GMOs, but don't ask me why that isn't GMIs), and all dairy ingredients are made with hormone free milk. The risotto is also gluten free. Amy's has even shown dedication in creating the carton which is made from 100% recycled paperboard and itself is recyclable. I don't mind paying a little extra for something that is delicious and is made with wholesome, nutritious ingredients by a company that wants to participate in the recycling program. The risotto takes 6 to 7 minutes to prepare using the microwave directions.
I purchased the risotto at my local supermarket, HEB, but I have seen it at Target. I believe most grocery stores carry Amy's Kitchen products, so look for the mushroom risotto, it is delizioso!
